A local inn whose name begins with “H” recently served a bowl of unseasoned chopped tomatoes accompanied by untoasted rounds of a generic baguette. That’s not best way bruschetta. The recipe is simple, but attention to the details will yield a much more satisfying result. Makes about 10 appetizer servings.
Ingredients:
½ pound or so (3 or 4) Roma tomatoes, seeded and cored and chopped into uniform 3/8 inch cubes
1 clove garlic, chopped fine
1 T olive oil, plus more for toasting the bread
½ t Kosher salt
10-inch baguette, cut on the bias into approximately 20 slices.
Method: mix oil, salt, garlic and tomato and macerate for at least an hour. This process adds flavor to the tomatoes, and also helps keep them from falling off the bread. Lightly toast the baguette slices (the better the baguette, the better the bruschetta will be) with a little olive oil or butter. Serve the tomato mixture in a bowl surrounded by toasts so guests can make their own, or spoon a little of the tomato mix onto each toast and serve, 2 to a person, as part of a prepared appetizer assortment.
Options: if you want to get fancy, add a few capers or thin-sliced scallions or a sprinkling of Parmesan or Gran Padano cheese.
Horrible!. A good jarred one is Trader Joe’s Trader Giotto’s Bruschetta. Don’t bother with bread. Serve on Fritos! Not Doritos! Sorry… Sorta.
How about you pour some 1000 island dressing on top? Animal style!
With 1000 island dressing and melty cheese it would make a good baked dip or even a casserole with pasta. I’m thinking some crab like item too. Bread crumbs on top! Bruschetta Cheese Dip/Casserole!
Oh man, now I’m getting hungry. And maybe you could serve with (additional) Doritos (no Fritos, since the Cowboys lost) as a Super Bowl Snack! The crab would be most appropriate if the 49ers make it to the big game… if it’s the Eagles you could substitute thin sliced and griddled steak! (with chili powder if the opponent is the Bengals, or BBQ sauce if it’s Kansas City…)
I admire your mad skills at avoiding a Buffalo reference. But. Super Bowl next year after we (you) find somebody to produce, and distribute it. Jarred or frozen? Both! DON’T Burn YOUR Fingers Authentic Cheesy Bruschetta Something or Other….
Frozen fresh tomatoes? Genius! And much as Crystal Hot Sauce will private-label to your preference, we can be sure to offer an avenue so each team can customize it for their very own Cheezy Bruschetta. I call already see the dollars rolling in!
I’m not sure about tomatoes, there are diced canned ones, something like that, drained. We can use the juices in the Bloody Mary Mix/Pizza topping. Unfortunately I have a lot on my plate right now, so to speak, and wont be able to resume work until late spring. We’ll talk then! In the meantime, bacon belongs in the mix somewhere…
