Garlic bacon is exactly what we need in times like these. We stole it from Food52, who stole it from Chrissy Teigen. Only change we’ve made is to double the garlic. Makes 1 or 2 servings, but it’s easy to expand.
Ingredients:
4 slices bacon, thick sliced
2 cloves garlic, finely minced
Method: preheat oven to 375 degrees. Lay out bacon on a silicon pad or parchment paper on a half sheet pan, making sure the slices do not touch. Distribute garlic bits evenly over the bacon. Bake 20 minutes or until crisp, then drain on paper towels. Use the bacon grease generated to roast amazing root vegetables; DO NOT throw it out.
funny….never thought of that combo but makes total sense especially the part of using the grease for root veggies, or even saute green beans..etc…thanks for another great idea that I will need to incorporate!!
I will actually use even more garlic next time. Flavors the bacon, flavors the grease.
I have been doing this with bacon for more than a decade but slow cooking them in a cast iron skillet. Saving the drippings for future projects is a great idea. I usually pour my bacon drippings in a glass jar anyway. Now i will have some garlic infused in the bacon fat. Bacon. Garlic. Great comfort food.
