Garlic Mashed Potatoes

Garlic Mashed Potatoes

Along with Sautéed Spinach, Garlic Mashed Potatoes are the classic accompaniment to Pork Chops with Vinegar Peppers. Serves 4.

Ingredient:
1 lb potatoes (new, Yukon Gold or white, but not russets), peeled
4 cloves garlic, raw or roasted*, peeled and finely chopped
1/4 c buttermilk
2 T butter
Salt and pepper to taste

Method: Cut potatoes into uniform chunks 1 1/2 inch in diameter or so. Boil in salted water until just tender, about 15-20 minutes. Drain. Add other ingredients, mash and mix thoroughly, serve piping hot.

  • My local supermarket has one of the Delallo pepper bars where I can get a little tub of roasted garlic cloves at a very reasonable price. That’s what I like to use for this recipe.
